I love muffins and I LOVE the smell of them first thing in the morning. Muffins are so easy to make and wonderful with milk or tea for breakfast. Here is a recipe I use that has less sugar. We cut out the sugar all together and just add a dab of *Smartbalance butter when they are nice and hot.
Makes 12 palm sized muffins or 6 oversized muffins
1 3/4 Cup all purpose flour
2 Tablespoons Sugar
2 Teaspoons baking powder
1/4 Teaspoon salt
2 Teaspoons Cinnamon
1 box raisins or 1/4 cup
1 beaten egg
3/4 milk (or rice milk)
1/4 Cup Olive Oil
1/3 Cup Applesauce
1.Grease twelve (or six for larger muffins) 2 1/2 inch muffin cups or line with paper bake cups; set aside.
2.In a medium bowl combine flour, sugar, baking powder, raisins, cinnamon and salt. Make a well in center of flour mixture; set aside.
3.In another bowl combine egg, milk, oil and applesauce. Add egg mixture all at once to flour mixture.
4.Spoon batter into prepared muffin cups, filling each two-thirds (or for oversized muffins fill up to the top and heaping). Bake at 400 degrees in oven or toaster oven for 18-20 minutes until golden and a wooden toothpick comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm.
